These Andes Mint Chocolate Crinkle Cookies are everything you want in a dessert: chocolatey, minty, chewy, and just a little bit fancy-looking without any of the fuss. They’re the cookie you bring to a party and watch disappear.

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • ½ teaspoon mint extract
  • 2 cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ cups Andes Crème de Menthe baking chips or chopped Andes mints
  • ½ cup powdered sugar, for rolling

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes. Scrape down the sides once or twice.
  3. Beat in the eggs one at a time, mixing well after each. Add the vanilla extract and mint extract. Mix until just combined.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just incorporated.
  6. Gently fold in the Andes mint baking chips or chopped mints with a spatula.
  7. Cover the bowl and refrigerate for 20-30 minutes (optional but recommended).
  8. Place the powdered sugar in a small bowl. Scoop rounded tablespoons of dough (about 1.5 tablespoons each) and roll them into balls. Roll each ball generously in the powdered sugar.
  9. Place the dough balls on the prepared baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes.
  10. Let the cookies rest on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For best results, chill the dough for 20-30 minutes before baking to prevent spreading and enhance the crinkle effect. Roll dough balls in powdered sugar right before baking. Use a light hand with mint extract as it is potent. Let cookies rest on the baking sheet for 5 minutes before transferring to a cooling rack. Cookies taste even better the next day as flavors meld.
