These baked cinnamon sugar pumpkin donuts are soft, tender, and coated in a crunchy cinnamon sugar topping. They come together in about 30 minutes with simple pantry ingredients, making them the perfect fall treat.

  • ½ cup (100g) granulated sugar
  • ¼ cup (50g) packed brown sugar
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 ½ teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 1 cup (245g) pumpkin purée
  • 2 large eggs, room temperature
  • ¼ cup (60ml) melted butter, cooled slightly
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla extract
  • ¼ cup (60ml) buttermilk
  • For the coating:
  • ½ cup (100g) granulated sugar
  • 1 ½ tablespoons cinnamon
  • 3 tablespoons melted butter

Instructions

  1. Preheat your oven to 350°F (175°C). Spray your donut pan generously with non-stick cooking spray.
  2. In a large bowl, whisk together the dry ingredients: all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt.
  3. In a separate medium bowl, whisk together the wet ingredients: pumpkin purée, eggs, melted butter, vegetable oil, vanilla extract, and buttermilk until smooth.
  4. Pour the wet ingredients into the dry ingredients. Use a rubber spatula to fold them together gently until just combined (a few lumps are fine).
  5. Transfer the batter to a piping bag or a zip-top bag with the corner snipped off. Pipe the batter into the prepared donut pan, filling each cavity about ¾ full.
  6. Bake for 10-12 minutes, until the donuts spring back when touched and a toothpick inserted comes out clean.
  7. Let the donuts cool in the pan for 3-4 minutes, then transfer to a cooling rack and cool for another 2-3 minutes.
  8. While the donuts cool, prepare the coating: In a shallow dish, whisk together ½ cup granulated sugar and 1 ½ tablespoons cinnamon. Melt 3 tablespoons of butter in a small bowl.
  9. While the donuts are still warm, brush each one with melted butter, then immediately dip into the cinnamon sugar mixture, turning to coat all sides.
  10. Place the coated donuts back on the cooling rack to set. Serve warm or at room temperature.

Notes

Don’t overmix the batter to avoid dense donuts. Use room temperature ingredients. Coat donuts while warm for best adherence. For a gluten-free version, use a 1:1 gluten-free flour blend. For dairy-free, use dairy-free butter and buttermilk substitute.
