  • 8 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/2 cup buffalo sauce (such as Frank’s RedHot)
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled blue cheese, divided
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika (optional)
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh chives or green onions, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium mixing bowl, combine the softened cream cheese, sour cream, and mayonnaise. Beat with a hand mixer or wooden spoon until completely smooth.
  3. Add the garlic powder, onion powder, smoked paprika, and a few grinds of black pepper. Mix until evenly distributed.
  4. Pour in the buffalo sauce and mix until fully incorporated. Taste and adjust heat if desired.
  5. Fold in the shredded chicken, 3/4 cup of the cheddar cheese, all of the mozzarella, and 1/4 cup of the crumbled blue cheese until evenly distributed.
  6. Transfer the mixture to a 9-inch baking dish or small skillet and spread into an even layer.
  7. Sprinkle the remaining 1/4 cup of cheddar cheese evenly over the top. Dot with the reserved 2 tablespoons of blue cheese crumbles.
  8. Bake for 20 to 25 minutes, or until hot, bubbly, and lightly golden on top.
  9. Remove from the oven and let rest for 5 minutes.
  10. Garnish with chopped chives or green onions and a few extra cracks of black pepper. Serve warm with tortilla chips, celery sticks, carrot sticks, or crusty bread.
