A light and fresh apple cider mimosa bar that comes together in under 10 minutes. Perfect for brunch gatherings, this customizable recipe features a perfect balance of tart apple cider and crisp bubbles with beautiful garnishes.

  • 4 cups (950 ml) apple cider, chilled
  • 1 bottle (750 ml) Prosecco or Champagne, chilled
  • 2 cups (475 ml) sparkling water
  • 2 apples (Honeycrisp and Granny Smith), thinly sliced
  • 68 cinnamon sticks
  • 46 sprigs fresh rosemary
  • ½ cup (80 g) pomegranate seeds
  • 45 star anise pods (optional)
  • ¼ cup (50 g) brown sugar (for rim)
  • ¼ cup (50 g) cinnamon sugar (2 tablespoons sugar + 1 teaspoon ground cinnamon)
  • 1 lemon wedge (for rimming glasses)

Instructions

  1. Prep the garnishes: Wash and slice apples into thin rounds or half-moons (about ⅛ inch thick). Place in a bowl of cold water with lemon juice to prevent browning. Rinse rosemary sprigs and pat dry. If using pomegranate seeds, remove from fruit and set aside.
  2. Make the rim sugars: Pour brown sugar into a shallow dish. Mix cinnamon sugar in another dish. Run a lemon wedge around the rim of each glass, then dip into sugar at a slight angle. Tap off excess and let dry.
  3. Set up the bar: Arrange glasses on a tray or counter. Place garnishes in small bowls. Put apple cider in a pitcher and prosecco in an ice bucket. If using sparkling water, place in a separate pitcher.
  4. Build the mimosa: Fill each glass about ⅓ full with apple cider. Slowly pour prosecco over the back of a spoon to preserve bubbles until glass is about ⅔ full. Leave room for garnishes.
  5. Add garnishes: Drop in a cinnamon stick, rosemary sprig, and a few apple slices. Sprinkle pomegranate seeds on top. If using star anise, place one on the rim or let it float.
  6. Serve immediately: Mimosas are best enjoyed fresh. Encourage guests to make their own as they go to keep the fizz alive.

Notes

Chill everything beforehand for best results. Use fresh-pressed, unfiltered apple cider for optimal flavor. The 1:2 cider-to-prosecco ratio is ideal, but adjust to taste. For non-alcoholic version, replace prosecco with sparkling cider or club soda. Apple slices can be prepped a day ahead and stored in lemon water.
