  • 1 can (15 ounces) diced tomatoes with green chilies (undrained)
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup frozen corn kernels
  • 1/2 cup chicken broth
  • 1 1/2 cups shredded Mexican blend cheese (or cheddar, Monterey Jack)
  • Fresh cilantro, chopped (for garnish)
  • Sour cream or Greek yogurt (optional topping)
  • Diced avocado (optional topping)
  • Fresh lime wedges (optional topping)
  • Sliced jalapeños (optional topping)

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat until shimmering.
  2. Add the ground turkey and cook, breaking it up with a wooden spoon, until browned and fully cooked (internal temperature 165°F), about 7-9 minutes.
  3. Push the turkey to one side of the skillet. Add the diced onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for 30 seconds until fragrant. Stir everything together.
  4. Sprinkle the taco seasoning over the turkey and onion mixture. Stir well and cook for 1 minute to toast the spices.
  5. Add the undrained diced tomatoes with green chilies, drained black beans, frozen corn, and chicken broth. Stir to combine. Bring to a gentle simmer, then reduce heat to medium-low.
  6. Simmer uncovered for 8-10 minutes, stirring occasionally, until the mixture thickens and the liquid reduces.
  7. Sprinkle the shredded cheese evenly over the top. Cover the skillet with a lid or aluminum foil and cook for 2-3 minutes until the cheese is fully melted and bubbly.

Notes

For best results, let the shredded cheese come to room temperature before adding. Don’t skip browning the turkey or toasting the spices. If using 99% lean turkey, add an extra tablespoon of oil to prevent drying. Let the skillet rest for 5 minutes after adding cheese before serving.
