A beautiful, no-cook charcuterie board featuring seasonal fall fruits, creamy cheeses, and savory cured meats. Perfect for Thanksgiving Eve or any fall gathering, this board is easy to assemble and guaranteed to impress.

  • 8 oz Brie cheese (double or triple cream)
  • 6 oz Aged sharp cheddar cheese
  • 4 oz Goat cheese log
  • 4 oz Prosciutto, thinly sliced
  • 4 oz Sopressata
  • 4 oz Genoa salami
  • 6–8 Fresh figs, halved
  • 1 Crisp apple (Honeycrisp or Fuji), sliced
  • 1 Ripe pear (Bartlett or Anjou), sliced
  • 1/2 cup Pomegranate seeds
  • 1/2 cup Dried apricots
  • 1 cup Mixed nuts (roasted salted almonds, candied pecans, walnuts)
  • Honey, for drizzling
  • 6 oz Crackers and crostini (mix of buttery crackers, seedy crisps, toasted baguette slices)
  • Fresh rosemary sprigs, for garnish
  • Fresh thyme leaves, for garnish
  • Edible flowers (optional, for garnish)

Instructions

  1. Prep your ingredients: Take brie and goat cheese out of fridge 30 minutes before starting. Wash and dry fruits. Slice apple and pear (toss with lemon juice to prevent browning), halve figs, seed pomegranate. Slice cheddar into 1-inch cubes or thin triangles. Arrange meats on a separate plate.
  2. Place small bowls or ramekins on the board for honey, pomegranate seeds, and nuts. This anchors your layout.
  3. Place the brie wheel slightly off-center on the board. Place goat cheese log nearby on a slight diagonal. Scatter cheddar cubes in a small cluster across from the brie.
  4. Fold prosciutto slices into loose ribbons and tuck next to the brie. Roll sopressata slices into cylinders or fold into quarters. Arrange Genoa salami in a small fan near the cheddar.
  5. Place fig halves near the goat cheese. Fan out apple slices in an arc next to the prosciutto. Do the same with pear slices on the opposite side. Scatter dried apricots near the cheddar.
  6. Fill empty spaces with crackers and crostini, tucking them around edges and between clusters. Add candied pecans and almonds in small piles around the board.
  7. Drizzle honey over brie and goat cheese. Sprinkle fresh thyme over goat cheese. Tuck rosemary sprigs between cheese and fruit. Add edible flowers if using.

Notes

Don’t assemble the board more than an hour before serving to prevent crackers from getting soft and fruit from browning. Prep ingredients the night before and store separately. Let cheeses come to room temperature for best flavor. For a vegan version, use cashew-based brie alternative and vegan herb cream cheese, and substitute meats with smoked carrot ‘lox’ or marinated mushrooms.
