Best Easy Fresh Fig and Goat Cheese Flatbread with Honey

This sweet and savory flatbread combines jammy roasted figs, creamy tangy goat cheese, and golden honey on a crispy base. It’s quick, easy, and perfect for entertaining or a weeknight dinner.

  • 6 to 8 medium fresh figs (Black Mission or Brown Turkey)
  • 4 ounces soft goat cheese (log-style, room temperature)
  • 2 to 3 tablespoons honey (mild wildflower or orange blossom)
  • 1 large pre-made flatbread, naan, or pizza crust (10-inch)
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon fresh thyme leaves (optional)
  • Balsamic glaze for drizzling (optional)
  • Flaky sea salt and black pepper to taste
  • Optional: arugula, toasted walnuts or pecans, prosciutto

Instructions

  1. Preheat oven to 400°F (200°C) with a rack in the middle position.
  2. Rinse figs, pat dry, trim stems, and slice into quarters or sixths.
  3. Place flatbread on a parchment-lined baking sheet. Brush with olive oil and sprinkle with a pinch of salt.
  4. Pre-bake flatbread for 5 minutes until golden at edges.
  5. Remove from oven. Scatter crumbled goat cheese evenly over flatbread, leaving a border. Arrange fig slices on top, pressing gently.
  6. Drizzle 1 to 2 tablespoons honey over figs and cheese.
  7. Sprinkle fresh thyme leaves over top.
  8. Return to oven and bake 8 to 10 minutes until cheese is melty, figs are soft, and edges are deep golden brown.
  9. Remove from oven. Let rest 2 minutes. Drizzle with balsamic glaze and additional honey if desired.
  10. Sprinkle with flaky sea salt and black pepper. Add arugula or prosciutto if using.
  11. Slice into 6 to 8 pieces and serve warm.

Notes

Pre-baking the flatbread prevents sogginess. Use room temperature goat cheese for even melting. Don’t overload with toppings. Honey can burn, so add most before baking and save some for after. Figs should be ripe but not mushy.
