This candy corn popcorn bark is a quick and easy treat that brings back the magic of a beloved bakery recipe. With simple ingredients and a perfect crunchy, sweet, and salty texture, it’s ideal for fall gatherings, movie nights, or homemade gifts.

Ingredients

Scale
  • 8 cups popped popcorn (about 1/2 cup unpopped kernels or one 3.3 oz bag microwave popcorn)
  • 1 1/2 cups candy corn (about 8 oz)
  • 2 cups white chocolate chips (about 12 oz, preferably Ghirardelli or Guittard)
  • 1 tablespoon coconut oil or vegetable shortening
  • 1/4 teaspoon salt (if using unsalted popcorn)
  • Optional: 1/2 cup salted peanuts or pretzel pieces

Instructions

  1. Prep your popcorn and pan: Pop the popcorn to yield 8 cups. Spread it on a large baking sheet lined with parchment paper. Remove any unpopped kernels and small hard pieces.
  2. Melt the white chocolate: Place white chocolate chips and coconut oil in a large microwave-safe bowl. Microwave in 30-second intervals, stirring after each, until smooth and glossy (about 1.5-2 minutes total). Do not overheat.
  3. Combine and coat: In a large mixing bowl, combine candy corn (and optional peanuts/pretzels) with melted white chocolate. Stir gently until well coated.
  4. Assemble the bark: Pour the mixture over the prepared popcorn. Use a silicone spatula to spread it into a thin, even layer (about 1/2 to 3/4 inch thick). Sprinkle salt (or flaky sea salt) on top.
  5. Set and break: Refrigerate for at least 20 minutes until firm. Lift parchment onto a cutting board and break into irregular pieces by hand.

Notes

Use good quality white chocolate chips for smooth melting. Do not skip the coconut oil—it helps the bark set with a snappy texture. Work quickly once chocolate is melted. For best results, let the bark set in the fridge for at least 20 minutes. Store in an airtight container at room temperature for up to 5 days. If bark softens on a humid day, re-crisp in a 300°F oven for 2-3 minutes.
