  • 1 can (6 ounces) sliced black olives (drained)
  • 1 tablespoon Sriracha or ketchup (for bloodshot veins)
  • Fresh parsley or chives, chopped (optional, for eyelash effect)

Instructions

  1. Hard-boil the eggs: Place the 12 eggs in a single layer in a saucepan. Cover with cold water by about 1 inch. Add the white vinegar. Bring to a rolling boil over high heat. Once boiling, cover the pot, turn off the heat, and let sit for exactly 12 minutes.
  2. Ice bath: While the eggs sit, fill a large bowl with ice and cold water. After 12 minutes, transfer the eggs to the ice bath using a slotted spoon. Let chill for at least 10 minutes.
  3. Peel the eggs: Gently tap each egg on the counter to crack the shell all over, then roll between your palms to loosen. Start peeling from the wider end. Rinse under cold water and pat dry.
  4. Slice and scoop: Slice each egg in half lengthwise. Gently pop out the yolks into a medium mixing bowl. Arrange the egg white halves on a serving platter, cut side up.
  5. Make the filling: Mash the yolks with a fork until crumbly. Add mayonnaise, yellow mustard, 1/2 teaspoon Sriracha, salt, and pepper. Mix until smooth and creamy. Adjust seasoning to taste.

  7. Create the pupils: Use a small round cookie cutter (about 1/2 inch) to punch out circles from the black olive slices. Place one olive circle in the center of each yolk-filled egg white. Press gently to stick.
  8. Add the bloodshot effect: Using a toothpick or the tip of a knife, dab a tiny amount of Sriracha (or ketchup for kids) around the edge of the olive pupil, creating little ‘veins’ that spread outward into the yolk filling.

Notes

For best peeling, use eggs that are at least a week old. The ice bath is crucial for easy peeling. If the filling is too thick, add a teaspoon of milk or pickle juice; if too thin, add more mayo.
