Ingredients

Scale
  • 3 cups (360g) all-purpose flour
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1 cup (240ml) warm water (110°F)
  • 1 tablespoon brown sugar
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon salt
  • 1/3 cup baking soda
  • 8 cups water (for boiling bath)
  • Coarse pretzel salt, for sprinkling
  • 1 egg beaten with 1 tablespoon water (egg wash)
  • 2 cups (8 oz) sharp cheddar cheese, shredded
  • 1/2 cup (120ml) German beer (wheat beer or helles lager)
  • 1/2 cup (120ml) whole milk
  • 2 tablespoons unsalted butter (for sauce)
  • 2 tablespoons all-purpose flour (for sauce)
  • 1 teaspoon German mustard
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 teaspoon paprika

Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm water (110°F) and brown sugar. Sprinkle yeast over the top and let sit for 5-7 minutes until foamy.
  2. Make the dough: Add melted butter, salt, and 2 cups of flour to the yeast mixture. Stir until a shaggy dough forms. Gradually add remaining 1 cup of flour, stirring until dough pulls away from the bowl.
  3. Knead the dough: Turn onto a lightly floured surface and knead for 6-8 minutes until smooth and elastic.
  4. First rise: Place dough in a lightly oiled bowl, cover with a towel, and let rise in a warm spot for 30 minutes until doubled. Preheat oven to 425°F.
  5. Prepare baking soda bath: In a large pot, bring 8 cups of water to a rolling boil. Carefully add baking soda (it will bubble up), then reduce heat to a simmer.
  6. Shape pretzel bites: Punch down dough and divide into 4 pieces. Roll each into a 1-inch thick rope, then cut into 1-inch pieces (about 40-50 total).
  7. Boil pretzel bites: Working in batches of 8-10, boil bites in the baking soda water for 30 seconds per side. Remove with a slotted spoon and place on a parchment-lined baking sheet.
  8. Egg wash and salt: Brush each bite with egg wash and sprinkle generously with coarse pretzel salt.
  9. Bake: Bake at 425°F for 12-15 minutes until deep golden brown. Rotate sheet halfway through. Let cool 5 minutes.
  10. Make beer cheese sauce: In a small saucepan, melt butter over medium heat. Whisk in flour and cook 1 minute. Slowly pour in milk and beer, whisking constantly. Cook 2-3 minutes until thickened. Remove from heat and stir in cheddar, mustard, garlic powder, paprika, salt, and pepper until smooth. Keep warm.

Notes

Don’t skip the baking soda bath—it’s essential for the pretzel crust. Shred your own cheese for a smooth sauce. For best results, use a German wheat beer or helles lager; avoid IPAs. The dough can be refrigerated after the first rise for up to 24 hours.
