Instructions

  1. Make the marinade (5 minutes): In a medium bowl, whisk together the honey, Dijon mustard, whole grain mustard, minced garlic, olive oil, apple cider vinegar, salt, pepper, and smoked paprika (if using). Taste and adjust sweetness or tanginess as needed.
  2. Prep the chicken (10 minutes): Cut the chicken breasts into 1.5-inch cubes, roughly the same size for even cooking. Pat dry with paper towels.
  3. Marinate (15-20 minutes): Add chicken cubes to the marinade, toss to coat, and let sit at room temperature for 15-20 minutes. Do not exceed 30 minutes.
