Best Grilled Peach & Bourbon Caramel Sundae

Smoky grilled peaches meet a rich bourbon caramel sauce and creamy vanilla ice cream in this quick, easy summer dessert that feels fancy but comes together in under 20 minutes.

  • 4 medium ripe but firm peaches, halved and pitted
  • 4 tablespoons unsalted butter, divided
  • ½ cup packed light brown sugar
  • ⅓ cup heavy cream
  • 2 tablespoons bourbon
  • 1 teaspoon pure vanilla extract
  • 1 pint vanilla ice cream
  • Flaky sea salt (optional, for garnish)
  • Neutral oil (for the grill grates)

Instructions

  1. Preheat your grill to medium-high heat (about 400°F / 200°C). Halve the peaches and remove the pits. Place the peach halves in a mixing bowl and add 2 tablespoons of softened butter and 1 tablespoon of brown sugar. Toss gently to coat. Let them sit while you make the caramel.
  2. Make the bourbon caramel: In a small saucepan over medium heat, melt the remaining 2 tablespoons of butter. Add the remaining brown sugar (about 7 tablespoons) and stir constantly until the sugar dissolves and the mixture bubbles evenly, about 2-3 minutes. Slowly pour in the heavy cream while stirring. The mixture will steam and bubble up. Keep stirring until smooth, about 1 minute. Remove from heat and stir in the bourbon and vanilla extract. Set aside.
  3. Grill the peaches: Use a paper towel or pastry brush to lightly oil the grill grates. Place the peach halves cut-side down on the hot grates. Cook undisturbed for 3-4 minutes until grill marks form and edges char slightly. Flip carefully with tongs and cook for another 2-3 minutes on the skin side. The peaches should be tender but still hold their shape.
  4. Warm the caramel: While the peaches finish, gently reheat the caramel over low heat if it has thickened too much. Add a splash of cream or water if needed to reach a pourable consistency. Stir until smooth.
  5. Assemble the sundaes: Place a scoop (or two) of vanilla ice cream in each serving bowl. Nestle a grilled peach half (or two) next to the ice cream. Drizzle the warm bourbon caramel generously over everything. Sprinkle with a pinch of flaky sea salt if using. Serve immediately.

Notes

Use firm peaches so they don’t fall apart on the grill. Let the caramel cool for 2-3 minutes before pouring over ice cream to prevent melting. For a non-alcoholic version, substitute bourbon with 1 teaspoon vanilla extract plus 1 tablespoon water.
