A quick and easy overnight oats recipe that tastes like dessert but packs a protein punch. Perfect for busy mornings and picky eaters.

  • 1 cup (90g) rolled oats
  • ¾ cup (180ml) unsweetened milk (whole, almond, oat, or soy)
  • ¼ cup (60g) plain Greek yogurt
  • 1 medium ripe banana, mashed (about 120g)
  • 2 tablespoons (32g) peanut butter (creamy or crunchy)
  • 1 scoop (about 30g) vanilla or unflavored protein powder
  • 1 tablespoon (12g) chia seeds
  • 1 tablespoon (15ml) maple syrup or honey (optional)
  • Pinch of salt
  • Optional toppings: sliced banana, extra peanut butter, cinnamon, dark chocolate chips

Instructions

  1. Mash the banana in a medium bowl until smooth with a few small lumps.
  2. Add milk, Greek yogurt, peanut butter, and maple syrup (if using) to the mashed banana. Whisk until peanut butter is mostly incorporated.
  3. In a separate small bowl, stir together rolled oats, protein powder, chia seeds, and a pinch of salt.
  4. Pour dry ingredients into wet mixture and stir until well combined.
  5. Divide mixture evenly into two mason jars or airtight containers, leaving about an inch of space at the top.
  6. Add optional toppings if desired, or wait until morning.
  7. Cover jars and refrigerate for at least 6 hours or overnight.
  8. In the morning, stir the oats. If too thick, add a splash of milk. Serve cold or microwave for 45-60 seconds for a warm breakfast.

Notes

Mash banana well for even sweetness. Adjust milk ratio if using a very absorbent protein powder. For nut-free, use sunflower seed butter. For dairy-free, use plant-based milk and yogurt. Oats keep in fridge up to 5 days and can be frozen for up to 3 months.
