  • 1/4 teaspoon salt
  • 1/2 cup pitted Medjool dates, soaked in warm water for 10 minutes if firm
  • 1/3 cup unsweetened almond milk (or any milk)
  • 1 tablespoon coconut oil, melted
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon sea salt (plus more for sprinkling)

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish with butter or coconut oil.
  2. Make the date caramel: Drain soaked dates and blend with almond milk, melted coconut oil, vanilla extract, and sea salt until smooth. Set aside.
  3. Prepare the apples: In a large bowl, combine sliced apples, maple syrup, lemon juice, cinnamon, nutmeg, and cornstarch. Toss to coat evenly.
  4. Layer the filling: Spread apple mixture evenly in the prepared dish. Drizzle about half of the date caramel over the apples. Reserve the rest for serving.
  5. Make the oat crumble: In a medium bowl, mix rolled oats, almond flour, coconut sugar, melted butter, vanilla extract, and salt until combined and clumpy.
  6. Top the crisp: Sprinkle oat mixture evenly over the apples. Do not press down.
  7. Bake for 35-40 minutes, until topping is golden brown and apple juices are bubbling around the edges.
  8. Cool on a wire rack for at least 10 minutes. Drizzle remaining date caramel over the top and sprinkle with flaky sea salt before serving.

Notes

Soak dates if firm for smooth caramel. Slice apples evenly (about 1/4-inch thick). Check crisp at 30 minutes; tent with foil if topping browns too fast. Let rest 10-15 minutes before serving. Double the caramel for extra.
