These smoked sausage and pepper sliders are quick, easy, and perfect for game day or a lazy weekend. With caramelized sausage, sweet peppers, and melty cheese on soft buns, they’re a crowd-pleaser ready in just 30 minutes.

Ingredients

  • Smoked Sausage (12–14 oz)
  • Bell Peppers (2 large, mixed colors)
  • Yellow Onion (1 medium)
  • Slider Buns (8–10)
  • Olive Oil (2 tablespoons)
  • Butter (1 tablespoon)
  • Garlic (3 cloves, minced)
  • Salt and Black Pepper (to taste)
  • Smoked Paprika (½ teaspoon)
  • Provolone or Mozzarella Cheese (4–6 slices)
  • Mayonnaise or Garlic Aioli (for spreading)
  • Fresh Parsley (optional, for garnish)

Instructions

  1. Prep the ingredients: Slice the smoked sausage into ½-inch thick rounds or diagonal pieces. Slice the bell peppers into thin strips and the onion into thin half-moons. Mince the garlic. Set everything aside in separate piles.
  2. Sear the sausage: Heat 1 tablespoon of olive oil in your large skillet over medium-high heat. Once the oil shimmers, add the sausage slices in a single layer (work in batches if needed). Let them cook undisturbed for 2–3 minutes until the bottoms are deeply browned. Flip and cook another 2 minutes. Transfer the sausage to a plate and set aside.
  3. Cook the peppers and onions: Reduce the heat to medium. Add the remaining 1 tablespoon of olive oil and the butter to the pan. Toss in the sliced peppers and onions. Season with a pinch of salt and pepper. Cook, stirring occasionally, for 8–10 minutes until the peppers are softened and the onions are starting to caramelize.
  4. Add the garlic and paprika: Stir in the minced garlic and smoked paprika. Cook for 1 minute until fragrant.
  5. Combine everything: Return the seared sausage to the pan. Toss everything together and cook for 2 more minutes so the flavors meld. Taste and adjust seasoning if needed.
  6. Toast the buns: While the sausage and peppers cook, split your slider buns and toast them. You can do this in a separate dry skillet over medium heat (cut side down for 1–2 minutes) or on a baking sheet under the broiler for 1 minute.
  7. Assemble the sliders: Spread a thin layer of mayonnaise or garlic aioli on the bottom half of each bun. Pile on the sausage and pepper mixture. Tear or fold a slice of provolone cheese and place it on top of the hot mixture so it starts to melt. Close with the top bun.
  8. Serve immediately: These are best hot, right when the cheese is still melty. Garnish with fresh parsley if desired.

Notes

Toast the buns to prevent sogginess. Don’t overcrowd the pan when searing the sausage for best browning. The flavors improve after a day in the fridge.
