  • 1 vanilla bean, split lengthwise (or 1 teaspoon vanilla extract)

  • Orange peel twists (for garnish, optional)

Instructions

  1. Pour the apple cider into a large saucepan or Dutch oven. Add the cinnamon sticks, whole cloves, star anise pods, fresh ginger slices, and split vanilla bean (if using). Bring to a gentle simmer over medium-high heat, then reduce heat to low and let cook for 15 minutes.
  2. Remove from heat. If using a vanilla bean, fish it out and rinse for later use. Stir in the honey or maple syrup (if using) and fresh lemon juice.
  3. Place a fine-mesh strainer over a large bowl or serving vessel. Carefully pour the spiced cider through the strainer to remove all whole spices and ginger slices.
  4. Stir in the spiced rum. Start with 3/4 cup and adjust to taste.
  5. Ladle into mugs or heatproof glasses. Garnish with orange slices, cinnamon sticks, star anise, or apple slices as desired. Serve warm.

Notes

Don’t boil the cider; gentle simmering is key. Toast spices in a dry skillet for 30-60 seconds before adding for deeper flavor. Let the cider cool slightly before adding rum to prevent alcohol evaporation. The spiced cider base (without rum) can be made up to 3 days ahead and stored in the fridge. For a slow cooker version, combine cider and spices on low for 2-3 hours, then add rum before serving.
