Bright Make-Ahead Cranberry Orange Sauce with Ginger

A bold, make-ahead cranberry sauce with tart cranberries, bright orange, and spicy fresh ginger. Perfect for holiday prep, this sauce develops deeper flavors after a day in the fridge.

Ingredients

  • 12 ounces fresh or frozen cranberries (about 3 cups)
  • 3/4 cup granulated sugar
  • 1/2 cup fresh orange juice (about 2 medium oranges)
  • Zest of 1 medium orange
  • 1 tablespoon fresh ginger, peeled and finely grated
  • 1/4 cup water
  • Pinch of salt

Instructions

  1. Prepare your ingredients first. Wash the cranberries and pick out any soft or shriveled ones. Zest the orange before juicing it. Peel the ginger with a spoon and grate it finely. Measure out your sugar, water, and orange juice.
  2. Combine everything in the saucepan. Add the cranberries, sugar, orange juice, orange zest, grated ginger, water, and a pinch of salt to a medium saucepan. Stir to combine.
  3. Bring to a boil over medium-high heat. Stir occasionally as it heats up. Once it reaches a full boil, reduce the heat to medium-low.
  4. Simmer for 10-12 minutes. Stir every couple of minutes. The cranberries will burst and soften. The mixture will thicken and coat the back of a spoon.
  5. Check the consistency. For a chunkier sauce, stop here. For smoother texture, gently mash some berries against the side of the pot with the back of a spoon.
  6. Remove from heat and let it cool completely at room temperature (about 30-45 minutes).
  7. Refrigerate for at least 24 hours to allow flavors to meld and deepen.

Notes

This sauce needs at least 24 hours in the fridge for flavors to fully develop. It keeps for up to 2 weeks in the refrigerator and freezes well for up to 3 months. Fresh ginger is essential; do not substitute with dried ginger. The sauce can be served cold or at room temperature.
