  • 1 large head of romaine lettuce, washed and chopped
  • 1/4 cup capers, rinsed and drained
  • 1/2 cup Parmesan cheese, shaved or grated
  • 1 cup homemade or store-bought croutons
  • 1/3 cup mayonnaise
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 2 teaspoons Worcestershire sauce
  • 2 cloves garlic, minced
  • 1/4 cup freshly grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon olive oil (for frying capers)

Instructions

  1. Preheat grill pan or skillet over medium-high heat. Season chicken breasts with salt and pepper. Cook 5-7 minutes per side until internal temperature reaches 165°F (74°C). Let rest 5 minutes, then chop into bite-sized pieces.
  2. Wash and dry romaine lettuce thoroughly. Chop into roughly 1-inch pieces and place in a large salad bowl.
  3. Heat 1 tablespoon olive oil in a small frying pan over medium heat. Add rinsed capers and fry until they puff up and become crispy, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels.
  4. In a small bowl, whisk together mayonnaise, lemon juice, Dijon mustard, Worcestershire sauce, minced garlic, and Parmesan cheese. Season with salt and pepper to taste.
  5. Add chopped chicken, crispy capers, croutons, and Parmesan shavings to the romaine. Drizzle dressing over the top and toss gently until evenly coated.
  6. Taste and adjust seasoning with extra salt, pepper, or a squeeze of lemon if needed. Serve immediately.

Watch the capers closely when frying as they can burn quickly. Rest chicken after cooking to keep it juicy. Toss salad just before serving to keep croutons crunchy. Dressing can be made ahead and stored up to 3 days in the fridge. For dairy-free, use dairy-free mayonnaise and omit Parmesan or substitute with nutritional yeast. For low-carb, omit croutons or replace with toasted almond slivers.
