  • 1/4 cup (50g) light brown sugar, packed
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 teaspoon vanilla extract
  • 1 cup (90g) old-fashioned rolled oats
  • 1/2 cup (60g) all-purpose flour
  • 1/2 cup (100g) light brown sugar, packed
  • 1/4 cup (50g) granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup (113g or 1 stick) unsalted butter, cold and cut into small cubes
  • 1 cup (100g) pecan halves, roughly chopped

Instructions

  1. Preheat your oven to 375°F (190°C). Position the rack in the center of the oven.
  2. Prepare the apples: Peel, core, and slice your apples into uniform pieces about 1/4-inch thick. Place the sliced apples in your large mixing bowl.
  3. Make the filling: Add the granulated sugar, brown sugar, flour, cinnamon, nutmeg, lemon juice, and vanilla extract to the bowl with the apples. Toss everything together until every apple slice is evenly coated. Let this sit while you prepare the topping.
  4. Make the oat pecan topping: In your medium mixing bowl, combine the rolled oats, flour, both sugars, cinnamon, and salt. Whisk together until evenly distributed. Add the cold butter cubes to the dry mixture. Using a pastry cutter, two forks, or your fingertips, work the butter into the dry ingredients until the mixture resembles coarse meal with pea-sized butter pieces throughout. Fold in the chopped pecans until evenly incorporated.
  5. Assemble the crisp: Transfer the apple mixture to your 9×13-inch baking dish, spreading it into an even layer. Press down slightly to compact the apples. Sprinkle the oat pecan topping evenly over the apples, covering them completely. Don’t press the topping down.
  6. Bake: Place the dish on a baking sheet to catch any drips. Bake for 40-45 minutes, or until the topping is golden brown and the filling is bubbling around the edges. If the topping is browning too quickly (after about 30 minutes), tent loosely with aluminum foil for the remaining time.
