  • 1 cup (240ml) warm water (about 110°F)
  • 1 tablespoon granulated sugar

  • 1 teaspoon salt
  • ⅓ cup baking soda
  • 8 cups water (for boiling)
  • 1 large egg, beaten with 1 tablespoon water (egg wash)
  • Coarse sea salt or pretzel salt, for sprinkling
  • 8 oz (225g) sharp cheddar cheese, freshly grated
  • 4 oz (113g) cream cheese, softened
  • ¾ cup (180ml) dark ale or lager (not IPA)
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • ½ teaspoon Worcestershire sauce
  • Salt and black pepper to taste

Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm water and sugar. Sprinkle yeast over the top and let sit for 5-7 minutes until foamy.
  2. Make the dough: Add melted butter, salt, and 2 cups of flour to the yeast mixture. Stir until a shaggy dough forms. Gradually add remaining 1 cup of flour, stirring until dough comes together and pulls away from the bowl.
  3. Knead the dough: Turn dough onto a lightly floured surface and knead for 6-8 minutes until smooth and elastic. (Or use a stand mixer with dough hook on medium-low for 5 minutes.)
  4. First rise: Lightly oil the bowl, place dough inside, turning to coat. Cover with a towel and let rise in a warm place for 30-40 minutes until doubled in size.
  5. Preheat and prepare: Preheat oven to 425°F (220°C). Line a baking sheet with parchment. In a large pot, bring 8 cups of water and ⅓ cup baking soda to a rolling boil.
  6. Shape the pretzel bites: Punch down dough. Divide into 4 equal pieces. Roll each into a 12-inch long rope, 1 inch thick. Cut into 1-inch pieces (about 12-15 per rope, 48-60 total).
  7. Boil the pretzel bites: Working in batches of 8-10, drop into boiling water for 30 seconds, flipping halfway. Remove with a slotted spoon and place on prepared baking sheet.
  8. Egg wash and salt: Brush each bite with egg wash and sprinkle with coarse salt.
  9. Bake: Bake for 12-15 minutes until deep golden brown, rotating pan halfway through.
  10. Make the beer cheese dip: In a small saucepan over medium-low heat, whisk cream cheese and beer until smooth (2-3 minutes). Do not boil.
  11. Add cheddar: Reduce heat to low. Gradually add grated cheddar, whisking until each addition melts. Stir in Dijon mustard, garlic powder, Worcestershire sauce, and black pepper. Add salt only if needed.
  12. Serve immediately: Transfer warm pretzel bites to a platter with the dip in the center. Serve hot.

Notes

Do not skip the boiling step—it gives pretzels their chewy crust. Grate your own cheese for a smooth dip. Use a dark, malty beer; avoid IPAs. Keep dip warm with a splash of warm beer or milk if it thickens.
