These dramatic black cocoa cupcakes with delicate white spiderweb frosting are perfect for Halloween or any cozy occasion. They look like you spent hours, but the secret is simpler than you’d think.

Ingredients

  • All-purpose flour, 1 ½ cups (180g)
  • Black cocoa powder, ½ cup (50g)
  • Granulated sugar, 1 cup (200g)
  • Baking soda, 1 teaspoon
  • Salt, ½ teaspoon
  • Buttermilk, 1 cup (240ml), room temperature
  • Vegetable oil, ½ cup (120ml)
  • Large eggs, 2, room temperature
  • Vanilla extract, 2 teaspoons
  • Hot coffee, ½ cup (120ml)
  • Unsalted butter, 1 cup (226g), softened
  • Powdered sugar, 3 cups (360g), sifted
  • Heavy cream, 2 tablespoons (30ml)
  • Vanilla extract, 1 teaspoon
  • Pinch of salt
  • White candy melts or white chocolate, ½ cup (90g), melted
  • Black sanding sugar or edible glitter (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
  2. In a large bowl, whisk together flour, black cocoa powder, sugar, baking soda, and salt until no lumps remain.
  3. In a separate bowl, whisk together buttermilk, vegetable oil, eggs, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients and stir until just combined. Slowly pour in hot coffee while stirring. Batter will be thin.
  5. Divide batter evenly among liners, filling each about ⅔ full. Bake for 18-22 minutes, until a toothpick inserted in center comes out clean. Cool in pan 5 minutes, then transfer to a wire rack to cool completely.
  6. For frosting: Beat softened butter until creamy. Gradually add powdered sugar, then heavy cream, vanilla, and salt. Beat on medium-high for 3-4 minutes until light and fluffy.
  7. Pipe frosting onto cooled cupcakes.
  8. Melt white candy melts. Dip a toothpick into melted candy and draw three concentric circles on each cupcake. Using a clean toothpick, drag from center outward through all three circles, creating spokes. Repeat every ¼ turn to form a web.

Notes

Don’t overmix the batter. Room temperature ingredients matter. The coffee is not optional. Let cupcakes cool completely before frosting. Practice the spiderweb on a plate first. Use a light hand with the white candy.
