These warm, spicy, and creamy stuffed mushrooms are the perfect bite-sized comfort food. Ready in just 30 minutes, they’re ideal for game day, parties, or a cozy night in.

  • 16 oz cremini mushrooms (or white button mushrooms), stems removed
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste
  • 8 oz cream cheese, softened
  • 1/2 cup cooked shredded chicken (rotisserie chicken works perfectly)
  • 1/3 cup buffalo hot sauce (Frank’s RedHot recommended)
  • 1/4 cup ranch dressing (or blue cheese dressing)
  • 1/2 cup shredded cheddar cheese, divided
  • 2 tablespoons crumbled blue cheese (optional)
  • 1 green onion, thinly sliced (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a rimmed baking sheet with parchment paper or a silicone baking mat.
  2. Gently wipe the mushrooms clean with a damp paper towel. Remove the stems by gently twisting them off or using a small knife. Set the caps aside.
  3. Arrange the mushroom caps upside down on the prepared baking sheet. Drizzle with olive oil and season with salt and pepper. Toss gently to coat, then arrange them back in a single layer. Bake for 5 minutes.
  4. While the mushrooms are pre-baking, make the filling. In a small mixing bowl, combine the softened cream cheese, shredded chicken, buffalo hot sauce, ranch dressing, and 1/4 cup of the shredded cheddar cheese. Mix until well combined and creamy. If using blue cheese, fold it in gently.
  5. Remove the pre-baked mushrooms from the oven. Using a small spoon or melon baller, fill each mushroom cap with the buffalo chicken mixture, mounding slightly above the rim. Sprinkle the remaining 1/4 cup of shredded cheddar cheese evenly over the tops.
  6. Return the stuffed mushrooms to the oven and bake for 12 to 15 minutes, or until the filling is hot and bubbly and the cheese is melted and lightly golden.
  7. Remove from the oven and let cool for 2 to 3 minutes. Sprinkle sliced green onions over the top. Serve warm.

Notes

Pre-baking the mushrooms for 5 minutes prevents them from getting soggy. Use room temperature cream cheese for easier mixing. For a milder version, mix buffalo sauce with a tablespoon of melted butter. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a 350°F oven for 5-7 minutes. Unbaked stuffed mushrooms can be frozen for up to 2 months; bake from frozen, adding 5-7 minutes to the baking time.
