Instructions

  1. Prep the squash: Peel the butternut squash with a vegetable peeler, cut in half lengthwise, scoop out seeds, and cut into 1-inch cubes.
  2. Sauté the aromatics: Heat olive oil in a large pot over medium heat. Add chopped onion and cook until soft and translucent, about 4 minutes. Add minced garlic and cook for 30 seconds until fragrant.
  3. Simmer the squash: Add cubed squash, vegetable broth, salt, and pepper to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for 12-15 minutes until squash is fork-tender.
