Ingredients

Scale
  • 6 medium apples, peeled, cored, and sliced (about 2 pounds or 900 grams)
  • 1/4 cup (50 grams) granulated sugar
  • 1/4 cup (50 grams) light brown sugar, packed
  • 1 tablespoon cornstarch
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon salt
  • 1 tablespoon lemon juice
  • 1 cup (120 grams) old-fashioned rolled oats
  • 1/2 cup (60 grams) all-purpose flour
  • 1/2 cup (100 grams) light brown sugar, packed
  • 1/4 cup (50 grams) granulated sugar
  • 1/2 cup (60 grams) pecans, chopped
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup (113 grams or 1 stick) unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C). Position a rack in the center of the oven.
  2. Prepare the apples: Peel, core, and slice into 1/4-inch thick slices. Place in a large mixing bowl.
  3. Make the filling: Add granulated sugar, brown sugar, cornstarch, cinnamon, nutmeg, salt, and lemon juice to the apples. Toss until every slice is coated. Set aside.
  4. Toast the pecans (optional): In a small dry skillet over medium heat, stir chopped pecans for 3-4 minutes until fragrant and lightly browned. Remove and let cool.
  5. Make the oat pecan crumble topping: In a medium bowl, combine rolled oats, flour, brown sugar, granulated sugar, toasted pecans, cinnamon, and salt. Stir with a fork. Pour melted butter over dry ingredients and mix until moistened and clumpy.
  6. Pre-bake the crumble: Spread crumble topping in an even layer on a parchment-lined baking sheet. Bake for 8-10 minutes until lightly golden and toasty. Let cool slightly.
  7. Assemble the crisp: Pour apple filling into a greased 8×8-inch baking dish. Sprinkle pre-baked crumble evenly over the apples. Do not press down.
  8. Bake: Place dish on a baking sheet. Bake for 40-45 minutes until filling is bubbly and apples are tender. If topping browns too quickly, tent with foil for the last 10 minutes.
  9. Cool and serve: Let crisp cool on a wire rack for at least 15 minutes before serving. Serve warm with vanilla ice cream or heavy cream.

Notes

Don’t skip the cornstarch—it thickens the juices. Pre-baking the crumble is key for a crunchy topping. Let the crisp rest for 15-20 minutes before serving to allow the filling to set. Use a mix of Granny Smith and Honeycrisp or Fuji apples for best texture and flavor.
