  • 1 cup cold water
  • Ice cubes
  • ¼ cup heavy cream (cold)
  • 2 tablespoons whole milk (or oat milk for dairy-free)
  • 1 tablespoon pumpkin puree (not pumpkin pie filling)
  • 1 tablespoon vanilla syrup
  • ½ teaspoon pumpkin pie spice
  • ¼ teaspoon vanilla extract

Instructions

  1. Make the pumpkin cold foam base: In a small bowl, combine heavy cream, whole milk, pumpkin puree, vanilla syrup, pumpkin pie spice, and vanilla extract. Whisk gently with a fork to break up the pumpkin puree until smooth.
  2. Froth the mixture: Use a milk frother to whip the mixture for 20-30 seconds until it doubles in volume and becomes thick and pillowy. Be careful not to over-froth.
  3. Prepare your glass: Fill a tall glass with ice cubes all the way to the top.
  4. Assemble the cold brew: Pour the cold brew concentrate over the ice, then add the cold water. Stir gently with a straw to combine.
  5. Top with pumpkin cold foam: Gently spoon or pour the cold foam over the back of a spoon onto the top of the cold brew. Let it sit for a few seconds to stabilize.
  6. Garnish and serve: Sprinkle a pinch of pumpkin pie spice on top. Insert a straw and serve immediately.

Notes

Use cold ingredients for best foam. Do not over-froth. If pumpkin puree is watery, strain it first. Drink within 10-15 minutes for best texture. For dairy-free, use oat milk and coconut cream.
