A festive and easy Halloween charcuterie board featuring homemade salted caramel apples, aged cheddar, brie, prosciutto, salami, nuts, and crackers. Perfect for parties, movie nights, or a cozy fall evening.

  • 6 medium Granny Smith apples
  • 1 cup (200g) granulated sugar
  • 1/2 cup (120ml) heavy cream
  • 4 tablespoons (56g) unsalted butter, cubed
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 6 wooden sticks
  • 8 ounces (225g) aged cheddar cheese, sliced
  • 6 ounces (170g) brie cheese, at room temperature
  • 4 ounces (115g) prosciutto, thinly sliced
  • 4 ounces (115g) salami, sliced
  • 1 cup (120g) mixed nuts (roasted almonds and pecans)
  • 1/2 cup (80g) dried cranberries
  • 1/2 cup (80g) dark chocolate chips
  • 1 cup (150g) assorted crackers
  • 1/2 cup (60g) candy corn (optional)
  • Fresh figs or grapes (optional)
  • Flaky sea salt (for garnish)
  • Fresh rosemary sprigs (for garnish)
  • Edible glitter or gold flakes (optional)

Instructions

  1. Wash and dry the apples thoroughly. Remove stems and insert a wooden stick into the top of each apple, pushing about halfway down. Place on a parchment-lined baking sheet and refrigerate for 20 minutes.
  2. In a heavy-bottomed saucepan, heat the sugar over medium heat without stirring. Swirl the pan occasionally until the sugar melts and turns a deep amber color, about 5-7 minutes. Remove from heat.
  3. Slowly pour in the heavy cream while stirring with a wooden spoon. The mixture will bubble up. Stir until smooth. Add the cubed butter, vanilla extract, and sea salt, stirring until the butter melts completely. Let cool for about 5 minutes.
  4. Remove the chilled apples from the fridge. Working quickly, dip each apple into the warm caramel, tilting the pan to coat evenly. Let excess drip off, then place on parchment paper. Sprinkle with flaky sea salt or edible glitter while caramel is still wet. Repeat with all apples. Let set at room temperature for 30 minutes.
  5. While the apples set, arrange the charcuterie board: place small bowls of nuts, dried cranberries, and candy corn in different corners. Fan out sliced cheddar and brie in separate sections. Fold prosciutto and salami into loose ribbons and place near cheeses. Fill gaps with crackers, dark chocolate chips, and fresh fruit.
  6. Once caramel has set, place the apples on the board. Tuck rosemary sprigs around for decoration. Serve at room temperature.

Notes

For best results, chill apples thoroughly before dipping. Do not stir sugar while melting to prevent graininess. Let caramel cool slightly before dipping to avoid runny coating. Store leftover caramel apples wrapped individually in parchment paper in the fridge for up to 3 days.
