Cozy One-Pot Pumpkin Chili with Ground Turkey

A rich, smoky, and subtly sweet chili made with ground turkey, pumpkin purée, and fire-roasted tomatoes. This easy one-pot meal is perfect for chilly fall evenings and is packed with protein and fiber.

  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 pound ground turkey (93% lean)
  • 1 can (15 ounces) pure pumpkin purée
  • 1 can (14.5 ounces) fire-roasted diced tomatoes
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) tomato sauce
  • 1 cup low-sodium chicken broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper (optional)
  • For serving: shredded cheddar cheese, sour cream or Greek yogurt, sliced avocado, fresh cilantro, chopped green onions, lime wedges

Instructions

  1. Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the diced onion and cook for 4-5 minutes until translucent and lightly browned.
  2. Add the minced garlic and cook for 1 minute until fragrant.
  3. Add the ground turkey and cook for 6-8 minutes, breaking it apart with a wooden spoon, until no longer pink.
  4. Sprinkle the chili powder, cumin, smoked paprika, oregano, salt, black pepper, and cayenne (if using) over the turkey. Stir constantly for 1 minute to bloom the spices.
  5. Add the pumpkin purée, fire-roasted diced tomatoes (with juices), drained black beans, and tomato sauce. Stir until well combined.
  6. Pour in the chicken broth and stir, scraping the bottom of the pot to release any browned bits.
  7. Bring the chili to a gentle boil, then reduce the heat to low. Cover the pot with the lid slightly ajar and simmer for 25-30 minutes, stirring every 10 minutes.
  8. Taste and adjust seasoning, adding more salt, cumin, or a squeeze of lime juice as desired.
  9. Remove from heat and let the chili rest for 5-10 minutes before serving. Serve hot with desired toppings.

Notes

For best flavor, let the chili sit overnight in the refrigerator before serving. The flavors meld and deepen over time. If the chili is too thick after simmering, add a splash of broth or water when reheating. For a thicker chili, simmer uncovered for an additional 10 minutes.
