  • 2 chai tea bags (or 1 tablespoon loose leaf chai)
  • 2 tablespoons (30 g) pumpkin puree (not pumpkin pie filling)
  • 1 to 2 tablespoons (1530 ml) maple syrup (Grade A dark amber preferred)
  • ½ teaspoon (2.5 ml) vanilla extract (pure vanilla)
  • ½ teaspoon pumpkin pie spice
  • ¼ teaspoon ground cinnamon, plus more for garnish
  • ¼ teaspoon ground ginger
  • Pinch of black pepper
  • Pinch of salt
  • For optional frothy topping: ¼ cup (60 ml) extra oat milk, warmed and frothed

Instructions

  1. Brew the chai tea: In a small saucepan, bring ½ cup (120 ml) water to a boil. Remove from heat, add 2 chai tea bags, and let steep for 5 minutes.
  2. Remove the tea bags: Squeeze them gently against the side of the pan with a spoon to extract all flavor.
  3. Add the oat milk: Pour in 1 ½ cups oat milk and whisk to combine with the brewed tea.
  4. Add the pumpkin and spices: Add 2 tablespoons pumpkin puree, 1-2 tablespoons maple syrup, ½ teaspoon vanilla, ½ teaspoon pumpkin pie spice, ¼ teaspoon cinnamon, ¼ teaspoon ginger, a pinch of black pepper, and a pinch of salt. Whisk vigorously until smooth.
  5. Heat gently: Place the saucepan over medium-low heat. Whisk occasionally as it warms up. Do not let it boil—heat until steaming hot but not bubbling, about 3-4 minutes.
  6. Taste and adjust: Taste and add more maple syrup for sweetness or more spice as desired.
  7. Froth the topping (optional): While the latte heats, warm ¼ cup extra oat milk in the microwave for 20 seconds. Use a handheld frother for 15-20 seconds until foamy, or shake in a jar with a tight lid for 30 seconds, then microwave for 15 seconds to set the foam.
  8. Pour and serve: Pour the hot latte into your favorite mug. Spoon the frothed oat milk on top. Sprinkle with cinnamon or pumpkin pie spice. Serve immediately.

Notes

Do not boil the oat milk—it can become grainy. Whisk the pumpkin puree slowly to avoid clumps. Steep the tea for exactly 5 minutes for best flavor. Warm your mug with hot water before pouring to keep the latte hot longer. The black pepper is essential—it enhances the other spices without adding heat.
