These creamy pumpkin overnight oats are a quick, no-cook breakfast that tastes like dessert. With maple syrup, toasted pecans, and warm spices, they’re perfect for busy fall mornings.

  • 1/3 cup canned pumpkin puree (100% pure pumpkin)
  • 1/2 cup milk of choice (whole milk, oat milk, or almond milk)
  • 1/4 cup plain Greek yogurt (full-fat or 2%)
  • 2 tablespoons maple syrup (real maple syrup)
  • 1/2 teaspoon pumpkin pie spice
  • 1/4 teaspoon vanilla extract
  • 1 tiny pinch of salt
  • 1/4 cup chopped pecans (toasted)
  • 1 tablespoon chia seeds (optional)

Instructions

  1. Toast the pecans: Heat a small skillet over medium heat. Add 1/4 cup chopped pecans and stir constantly for 2-3 minutes until they smell nutty and look slightly darker. Set aside to cool.
  2. Mix the base: In a jar or small bowl, combine 1/2 cup rolled oats, 1/3 cup pumpkin puree, 1/2 cup milk, 1/4 cup Greek yogurt, 2 tablespoons maple syrup, 1/2 teaspoon pumpkin pie spice, 1/4 teaspoon vanilla extract, and a tiny pinch of salt. If using chia seeds, add 1 tablespoon now.
  3. Stir until combined: Use a spoon or small whisk to mix everything together until the pumpkin and spices are fully incorporated. The mixture should look thick but stirrable, like a loose pudding.
  4. Seal and refrigerate: Put the lid on your jar and refrigerate for at least 4 hours, but overnight is best (8-12 hours).
  5. Check the texture in the morning: It should be thick and creamy. If too thick, stir in a splash of milk. If too thin, it might need another hour or you added too much liquid.
  6. Add the toppings: Sprinkle the toasted pecans on top, drizzle extra maple syrup if desired, and add a dusting of cinnamon. Eat cold straight from the jar, or let it sit on the counter for 10 minutes to take the chill off.

Notes

For meal prep, make 4-5 jars at once and leave the pecans off until ready to eat to keep them crunchy. The base oats will keep in the fridge for up to 5 days. If you prefer warm oats, microwave the jar (without lid) for 45-60 seconds, stir, then add pecans. These oats taste even better on day 2 as the flavors meld.
