  • 2 medium delicata squash (about 1½ pounds total)
  • 2 tablespoons extra-virgin olive oil
  • ½ teaspoon fine sea salt
  • ¼ teaspoon black pepper, freshly ground
  • ¼ cup tahini
  • 2 tablespoons pure maple syrup
  • 1 tablespoon fresh lemon juice
  • 2 to 3 tablespoons warm water
  • ¼ teaspoon ground cinnamon (optional)
  • 2 tablespoons toasted pumpkin seeds
  • 1 tablespoon fresh parsley, finely chopped

Instructions

  1. Preheat your oven to 425°F (220°C) with a rack in the middle position.
  2. Wash the delicata squash thoroughly under running water and pat dry. Trim off about ¼ inch from both ends of each squash.
  3. Stand each squash upright on its flat end and slice crosswise into ½-inch-thick rings. Remove seeds with your fingers or a small spoon.
  4. Place the squash rings in a large bowl. Drizzle with olive oil, then sprinkle with salt and pepper. Toss gently with your hands to coat evenly.
  5. Line a large baking sheet with parchment paper. Arrange the rings in a single layer without overlapping.
  6. Roast for 20 to 25 minutes, flipping the rings halfway through, until edges are deep golden brown and rings are tender when pierced with a fork.
  7. While the squash roasts, make the dressing: In a small bowl, combine tahini, maple syrup, lemon juice, and cinnamon (if using). Whisk until smooth. Add warm water 1 tablespoon at a time, whisking after each, until the dressing is thin enough to drizzle.
  8. Transfer the roasted squash rings to a serving platter. Drizzle with the maple tahini dressing. Sprinkle with toasted pumpkin seeds and fresh parsley. Serve warm or at room temperature.

Notes

For best caramelization, ensure squash rings are dry before seasoning and avoid overcrowding the pan. If tahini dressing is bitter, add extra maple syrup or a pinch of salt. Store leftovers in an airtight container in the refrigerator for up to 4 days; reheat in a 350°F oven for 5-7 minutes.
