  • 3 tablespoons unsalted butter, melted
  • 3 tablespoons pure maple syrup
  • 2 tablespoons brown sugar, packed
  • 1/4 cup old-fashioned rolled oats
  • 1/4 teaspoon salt
  • 1/4 teaspoon vanilla extract
  • Fresh thyme or rosemary sprigs (for garnish, optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or a silicone mat.
  2. Wash the delicata squash well. Cut off the stem end and tip. Slice the squash in half lengthwise and scoop out the seeds and stringy bits.
  3. Place each half cut-side down and slice into half-moon shapes about 1/2-inch thick.
  4. In a large bowl, toss the squash slices with olive oil, salt, pepper, and cinnamon until evenly coated. Spread them in a single layer on the prepared baking sheet.
  5. Roast the squash for 15 minutes.
  6. While the squash roasts, make the crumble: In a small bowl, combine chopped pecans, melted butter, maple syrup, brown sugar, oats, salt, and vanilla. Stir until it looks like wet sand.
  7. After 15 minutes, remove the pan from the oven. Sprinkle the pecan crumble mixture evenly over the squash pieces.
  8. Return the pan to the oven and roast for another 10-15 minutes, until the crumble is golden brown and the squash is fork-tender.
  9. Let the squash rest on the pan for 5 minutes before transferring to a serving platter. Garnish with fresh thyme or rosemary and flaky sea salt, and drizzle with extra maple syrup if desired.
