A quick and easy sheet pan dinner with Italian sausage and roasted vegetables, ready in under 30 minutes. Perfect for busy weeknights, this one-pan meal delivers crispy, caramelized sausages and tender, sweet veggies with minimal cleanup.

  • 1 pound (450g) Italian sausage links (sweet or spicy)
  • 2 medium bell peppers (any color), seeded and cut into 1-inch chunks
  • 1 large red onion, cut into wedges
  • 2 medium zucchini or summer squash, halved lengthwise and cut into half-moons
  • 1 pint (about 300g) cherry tomatoes
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: red pepper flakes for heat
  • Fresh parsley or basil, chopped (for garnish)
  • Grated Parmesan cheese (optional)
  • Crusty bread or cooked rice, for serving

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large sheet pan with parchment paper or aluminum foil.
  2. Wash and chop the bell peppers into 1-inch chunks. Cut the red onion into wedges. Slice the zucchini into half-moons about 1/2-inch thick. Leave the cherry tomatoes whole.
  3. In a large mixing bowl, combine the chopped peppers, onion, zucchini, and cherry tomatoes. Drizzle with 3 tablespoons of olive oil. Add the dried oregano, garlic powder, smoked paprika, salt, and black pepper. Toss until evenly coated.
  4. Spread the seasoned vegetables in a single layer on the prepared sheet pan. Nestle the sausage links among the vegetables, spacing them evenly.
  5. Roast for 20 minutes. Remove the pan from the oven and flip the sausages and stir the vegetables using tongs.
  6. Return the pan to the oven and roast for another 10-15 minutes, until the sausages are browned and cooked through (internal temperature of 160°F/71°C for pork) and the vegetables are tender with caramelized edges.
  7. Remove from the oven and let rest for 5 minutes. Sprinkle with fresh chopped parsley or basil and grated Parmesan if desired. Serve directly from the pan or transfer to a platter. Pair with crusty bread or rice.

Notes

For extra-crispy sausage casings, broil the pan for the last 2-3 minutes of cooking. Watch carefully to prevent burning. If using frozen vegetables, thaw and pat dry first to avoid steaming. Cut vegetables uniformly for even cooking. Do not overcrowd the pan; use two pans if needed.
