Cozy Slow Cooker Cheeseburger Soup with Sharp Cheddar

This thick, creamy, and cheesy soup tastes just like a cheeseburger in a bowl. Loaded with tender vegetables, ground beef, and sharp cheddar, it’s the ultimate comfort food for cold weather.

  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, peeled and diced
  • 2 stalks celery, diced
  • 3 medium russet potatoes, peeled and cubed into 1/2-inch pieces
  • 4 cups low-sodium chicken broth
  • 1 cup whole milk
  • 4 oz cream cheese, softened and cubed
  • 2 cups sharp cheddar cheese, freshly shredded
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • Optional toppings: cooked and crumbled bacon, sliced green onions, extra shredded cheddar, sour cream

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat until no longer pink, about 6-8 minutes. Leave about 1 tablespoon of fat in the pan. Transfer beef to a slow cooker.
  2. In the same skillet, sauté diced onion, carrots, and celery for 4-5 minutes until onions are translucent. Add minced garlic and cook for 30 seconds until fragrant. Scrape browned bits from the bottom and transfer to the slow cooker.
  3. Add cubed potatoes and chicken broth to the slow cooker. Stir to combine.
  4. Cover and cook on low for 4-6 hours or on high for 2-3 hours, until potatoes are fork-tender.
  5. About 20 minutes before serving, turn slow cooker to warm or low. In a small bowl, whisk softened cream cheese with 1 cup of hot broth from the slow cooker until smooth. Pour mixture back into the slow cooker.
  6. Add whole milk, Dijon mustard, and Worcestershire sauce. Stir well.
  7. Gradually add shredded sharp cheddar cheese, stirring constantly until completely melted and smooth.
  8. Season with salt and black pepper to taste. Ladle into bowls and top with optional toppings as desired.

Notes

Do not skip browning the beef and sautéing the vegetables—this builds deep flavor. Always shred your own cheese from a block to avoid a grainy texture. Temper the cream cheese with hot broth before adding to prevent curdling. For a thicker soup, make a cornstarch slurry (1 tablespoon cornstarch + 2 tablespoons cold water) and stir in; let cook 10 more minutes. For a thinner soup, add a splash of warm broth or milk.
