  • 3 large eggs
  • 1/4 cup packed brown sugar

  • 1/4 teaspoon salt
  • 2 tablespoons melted butter (for greasing)
  • Optional: icing packets from cinnamon rolls, chopped pecans, raisins, powdered sugar

Instructions

  1. Grease the inside of a 5-6 quart slow cooker insert with the melted butter.
  2. Open both cans of cinnamon rolls and set the icing packets aside. Cut each roll into quarters (about 32 pieces total).
  3. Place half of the cinnamon roll pieces into the slow cooker in an even layer. Sprinkle with half of the extra cinnamon. Add the remaining pieces on top and sprinkle with the rest of the cinnamon.
  4. In a medium mixing bowl, whisk together the heavy cream, eggs, brown sugar, vanilla extract, and salt until smooth and pale yellow (about 30 seconds).
  5. Pour the custard evenly over the cinnamon roll pieces. Use a spatula to gently press down on the rolls so they absorb some of the liquid. Do not stir.
  6. Cover the slow cooker with the lid and cook on LOW for 2 to 2.5 hours. Do not cook on high. Check at the 2-hour mark; the casserole is done when the edges are golden brown and the center is set but still slightly soft. A toothpick inserted into the center should come out with a few moist crumbs.
  7. Once done, turn off the slow cooker. Microwave the reserved icing packets for 10 seconds to loosen them, then drizzle the icing over the hot casserole. Let it sit for 5 minutes before serving.
  8. Serve warm, scooped directly from the slow cooker into bowls.

Do not overcook; stick to 2-2.5 hours max. Use full-fat heavy cream for best texture. Cut rolls into even pieces. Let rest 5 minutes before serving. For a crispier top, remove lid and set to WARM for 15-20 minutes after cooking, or broil in a baking dish for 2-3 minutes.
