  • 4 boneless, skinless chicken breasts
  • 8 slices thick-cut bacon
  • 8 oz (225 g) cream cheese, softened
  • ½ cup (120 ml) sour cream
  • 1 cup (110 g) shredded sharp cheddar cheese
  • 1 packet (about 2 tablespoons) ranch seasoning mix
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon freshly ground black pepper
  • Optional: chopped green onions or parsley for garnish

Instructions

  1. Cook the bacon in a skillet over medium heat until crispy, about 8-10 minutes. Drain on paper towels and crumble once cooled.
  2. Spray the inside of the slow cooker with nonstick cooking spray or lightly grease with butter.
  3. In a medium bowl, combine softened cream cheese, sour cream, ranch seasoning, garlic powder, onion powder, and black pepper. Stir until smooth.
  4. Place chicken breasts evenly in the bottom of the slow cooker.
  5. Spread the cream cheese mixture evenly over the chicken breasts.
  6. Sprinkle shredded cheddar cheese over the cream cheese layer.
  7. Scatter crumbled bacon pieces on top of the cheese layer, reserving some for garnish if desired.
  8. Cover and cook on low for 4-6 hours or on high for 2-3 hours, until chicken reaches 165°F (74°C) and is tender enough to shred.
  9. Shred the chicken directly in the slow cooker using two forks, mixing gently with the sauce, cheese, and bacon.
  10. Stir everything together for a creamy consistency and garnish with chopped green onions or parsley.
  11. If the sauce is too thick, add a splash of milk or chicken broth to loosen before serving.

Notes

Cook bacon separately to ensure crispiness and avoid greasiness. Use full-fat cream cheese and sour cream for best texture. Start checking chicken doneness at 4 hours on low to avoid overcooking. Layer cream cheese mixture on top of chicken rather than mixing in to keep chicken juicy. Add milk or broth if sauce is too thick after shredding.
