  • 1.5 lbs boneless, skinless chicken breasts (about 3 medium)
  • 2 cans (15 oz each) white beans (Great Northern, cannellini, or navy), drained and rinsed
  • 1.5 cups frozen corn
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 cans (4 oz each) diced green chiles
  • 4 cups low-sodium chicken broth
  • 8 oz cream cheese, softened and cubed
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano (preferably Mexican oregano)
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper (or to taste)
  • Optional garnishes: fresh cilantro, sliced jalapeños, shredded Monterey Jack cheese, diced avocado, lime wedges, tortilla chips or strips

Instructions

  1. Dice the onion and mince the garlic.
  2. Place the chicken breasts in the bottom of a 6-quart or larger slow cooker. Layer the diced onion, minced garlic, drained white beans, frozen corn, and diced green chiles on top.
  3. Sprinkle the ground cumin, dried oregano, salt, and pepper over the top. Pour in the chicken broth, ensuring most ingredients are covered. Gently stir to combine.
  4. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until the chicken is tender and shreds easily.
  5. Carefully remove the chicken breasts to a cutting board and shred with two forks.
  6. Add the cubed cream cheese to the slow cooker and stir until melted and smooth (about 2-3 minutes).
  7. Return the shredded chicken to the slow cooker and stir to combine. Taste and adjust salt and pepper if needed. For a thicker chili, cook uncovered for 15-20 minutes.
  8. Ladle into bowls and serve with desired garnishes.

Notes

For best results, add cream cheese at the end to prevent curdling. If using frozen chicken, add an extra hour to cook time. Leftovers taste even better the next day. For a thicker chili, mash some beans against the pot or cook uncovered. This chili freezes well for up to 3 months.
