  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh chopped chives or green onions for garnish (optional)

Instructions

  1. Preheat your grill to medium heat (about 350°F/175°C) and set up for indirect cooking by turning off burners directly under where the skillet will sit.
  2. In a mixing bowl, combine softened cream cheese, buffalo sauce, ranch dressing, garlic powder, onion powder, salt, and pepper. Stir until smooth and well incorporated (about 2-3 minutes).
  3. Fold the shredded chicken into the sauce mixture until evenly coated. Ensure the chicken is warm or at room temperature for best blending.
  4. Add shredded cheddar cheese and blue cheese crumbles (if using). Mix gently but thoroughly.
  5. Transfer the mixture to a cast iron skillet or grill-safe baking dish, smoothing the top with a spatula.
  6. Place the skillet on the grill over indirect heat. Close the lid and cook for 15-20 minutes, stirring halfway through to prevent hot spots. The dip should bubble and lightly brown on top when ready.
