  • 2 black tea bags (Assam or Darjeeling)
  • 2 cups (16 fl oz) whole milk or milk of choice (almond, oat, soy)
  • 12 tablespoons honey (plus extra for drizzle)
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Toast the cardamom pods, cinnamon stick, cloves, and peppercorns in a dry saucepan over medium heat for 2-3 minutes until fragrant, stirring occasionally to avoid burning.
  2. Add sliced fresh ginger and 2 cups water to the saucepan. Bring to a gentle boil, then reduce heat and simmer for 5 minutes.
  3. Add the black tea bags and simmer for another 3-4 minutes. Extend steeping by 1-2 minutes for stronger tea but avoid bitterness.
  4. Remove from heat and strain the chai mixture through a fine mesh strainer into a heatproof container, pressing gently on solids for extra flavor.
  5. Rinse the saucepan and pour in 2 cups milk. Warm on medium-low heat, stirring occasionally until just steaming (about 3-4 minutes). Avoid boiling.
  6. Slowly whisk the strained chai base into the warmed milk. Add 1-2 tablespoons honey and 1 teaspoon vanilla extract if using. Stir until honey dissolves and the latte is smooth.
  7. Optional: Froth the latte using a milk frother or whisk vigorously by hand until foamy.
  8. Pour into mugs and drizzle honey over the top to finish.

Toast spices gently to avoid burning and bitterness. Use warm milk (not boiling) when adding honey to preserve its flavor and nutrients. For dairy-free, use oat or almond milk and substitute honey with maple syrup or agave nectar. Fresh spices and good-quality tea bags improve flavor.
