  • 4 cups vegetable or chicken broth
  • 2 tablespoons olive oil, divided

  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Salt and black pepper to taste
  • 4 cups cubed sourdough bread (day-old, 1-inch cubes)
  • 4 tablespoons unsalted butter
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
  • 1/4 teaspoon garlic powder
  • Flaky sea salt for finishing
  • 2 tablespoons pumpkin seeds, toasted (optional garnish)
  • 1 tablespoon chopped fresh parsley (optional garnish)
  • Heavy cream or coconut milk for drizzling (optional garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Cut each honeynut squash in half lengthwise. Scoop out seeds and stringy bits. Place cut-side up on prepared baking sheet.
  3. Drizzle cut sides with 1 tablespoon olive oil and 1/2 tablespoon maple syrup. Sprinkle with salt and pepper. Roast for 35-40 minutes until fork-tender and edges are caramelized.
  4. While squash roasts, make croutons: In a large skillet over medium heat, melt 4 tablespoons butter. Swirl occasionally for 3-4 minutes until butter foams and turns golden brown with a nutty aroma. Remove from heat immediately. Stir in thyme and garlic powder.
  5. Add cubed sourdough to skillet and toss to coat evenly. Spread on a baking sheet in a single layer. Bake at 400°F for 10-12 minutes, flipping halfway, until golden and crunchy. Sprinkle with flaky sea salt while warm.
  6. Heat remaining 1 tablespoon olive oil in a large pot over medium heat. Add diced onion and cook 5-6 minutes until translucent. Add smashed garlic and cook 1 minute until fragrant.
  7. Let roasted squash cool slightly. Scoop flesh from skins and add to pot with onions and garlic. Pour in broth, add remaining 1/2 tablespoon maple syrup, cinnamon, and nutmeg. Stir and bring to a gentle simmer. Cook 10 minutes.
  8. Remove pot from heat. Using an immersion blender, blend until silky smooth. (Or blend in batches in a regular blender, filling no more than halfway each time.)
  9. Taste and adjust seasoning with salt and pepper. If too thick, add more broth or water. If too thin, simmer 5-10 minutes to reduce.
  10. Ladle soup into bowls. Top with brown butter croutons, toasted pumpkin seeds, fresh parsley, and a drizzle of cream or coconut milk if desired.

Don’t skip roasting the squash—it concentrates the sugars and adds depth. Watch brown butter carefully; it goes from perfect to burnt in 30 seconds. Store croutons separately from soup to maintain crunch. Soup actually tastes better the next day as flavors meld. For vegan version, use olive oil instead of butter and coconut milk for garnish.
