  • 1 cup old-fashioned rolled oats (90 g)
  • 1 tablespoon chia seeds (optional)
  • For topping: 1/2 banana, sliced
  • For topping: 1 tablespoon peanut butter (warmed)
  • For topping: sprinkle of cinnamon or extra chia seeds (optional)

Instructions

  1. Blend the Base: In a blender, combine 1 cup milk, 1/2 cup Greek yogurt, 1 scoop vanilla protein powder, 2 tablespoons peanut butter, 1 ripe banana (broken into chunks), 1 tablespoon maple syrup, and a pinch of salt. Blend until completely smooth, about 2 minutes.
  2. Add the Oats: Pour the blended mixture into a bowl or directly into your jars. Add 1 cup rolled oats and 1 tablespoon chia seeds (if using). Stir until everything is evenly combined and oats are fully submerged.
  3. Divide and Seal: Pour the mixture evenly into two 16-ounce mason jars or one large container. Leave about an inch of space at the top. Screw on lids tightly.
  4. Refrigerate Overnight: Place jars in the fridge for at least 6-8 hours (or up to 5 days).
  5. Add Toppings in the Morning: Stir the oats. If too thick, add a splash of milk. Top with sliced banana, a drizzle of warm peanut butter, and a sprinkle of cinnamon or chia seeds if desired.
  6. Serve: Eat cold or warm. To warm, microwave the jar for 45-60 seconds, stir, then add toppings.

Notes

For best texture, blend the wet ingredients before adding oats. Use room temperature ingredients for smoother blending. Taste the base before adding oats and adjust sweetness or peanut butter. If oats are too thick in the morning, stir in extra milk. For meal prep, leave banana topping off until serving to prevent browning.
