These crispy bacon-wrapped jalapeño poppers are baked instead of fried for a perfect texture—crispy bacon, creamy filling, and just the right amount of heat. They’re a crowd-pleasing appetizer that disappears fast at any gathering.

  • 10 large jalapeño peppers
  • 8 ounces cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup chopped green onions
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • 10 slices thin-cut bacon
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil, then place a wire rack on top.
  2. Cook 2 to 3 slices of bacon in a skillet over medium heat until crispy, about 5 to 7 minutes. Let cool, then crumble into small pieces. Set aside.
  3. Wear gloves. Cut each jalapeño in half lengthwise. Use a small spoon or melon baller to scoop out the seeds and white membranes.
  4. In a medium mixing bowl, combine the softened cream cheese, shredded cheddar, crumbled bacon, chopped green onions, garlic powder, and smoked paprika. Mix until evenly combined. Season with salt and pepper to taste.
  5. Fill each jalapeño half with the cream cheese mixture, level with the edges of the pepper.
  6. Cut each slice of thin-cut bacon in half lengthwise. Wrap one half-slice around the middle of each filled jalapeño half, stretching slightly to fit snugly. Place seam side down on the wire rack.
  7. Bake for 20 to 25 minutes, until the bacon is crispy and the filling is bubbly. Start checking at 18 minutes.
  8. Let the poppers rest on the wire rack for about 5 minutes before serving.

Notes

Pre-cook the bacon for the filling to ensure it gets crispy. Use a wire rack for even crisping. Thin-cut bacon works best. Let poppers rest for 5 minutes before serving to avoid burning your mouth. For milder poppers, scrape out all white membranes. For extra heat, leave some membrane or add cayenne to the filling.
