These crispy baked buffalo cauliflower bites are a game-day favorite, offering all the flavor of buffalo wings without the grease. A simple batter creates a shatteringly crisp shell that holds onto tangy, spicy buffalo sauce, making them an irresistible appetizer that even wing-lovers will devour.

Ingredients

Scale
  • 1 large head of cauliflower, cut into bite-sized florets (about 45 cups)
  • 1 cup all-purpose flour (or gluten-free 1:1 baking flour)
  • 1 cup milk (dairy or unsweetened almond milk)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup buffalo hot sauce (such as Frank’s RedHot)
  • 2 tablespoons unsalted butter, melted (or vegan butter/olive oil)
  • 1 teaspoon honey or maple syrup (optional)
  • Ranch or blue cheese dressing for dipping (optional)
  • Fresh celery sticks (optional)
  • Chopped fresh parsley or green onions for garnish (optional)

Instructions

  1. Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper and place a wire cooling rack on top if available.
  2. Wash the cauliflower and pat it completely dry. Cut into bite-sized florets, about 1 to 1.5 inches each, aiming for uniform size.
  3. In a large mixing bowl, whisk together 1 cup all-purpose flour, 1 cup milk, 1 teaspoon garlic powder, 1 teaspoon onion powder, ½ teaspoon smoked paprika, ½ teaspoon salt, and ¼ teaspoon black pepper until smooth (consistency of pancake batter).
  4. Add the cauliflower florets to the batter and toss until evenly coated. Work quickly to avoid sogginess.
  5. Using fingers or tongs, lift each battered floret, letting excess batter drip off, and place on the prepared baking sheet in a single layer without touching.
  6. Bake for 10 minutes, then remove from oven and carefully flip each floret using tongs. Return to oven and bake for another 10 minutes until golden brown and crispy on the edges.
  7. While cauliflower bakes, prepare the sauce: In a small saucepan over low heat (or microwave in 20-second bursts), combine ½ cup buffalo hot sauce, 2 tablespoons melted unsalted butter, and 1 teaspoon honey or maple syrup (if using). Whisk until smooth and keep warm.
  8. Once cauliflower is baked, transfer to a large clean bowl. Pour warm buffalo sauce over and gently toss with tongs until evenly coated.
  9. Serve immediately on a platter, garnished with parsley or green onions if desired, with ranch or blue cheese dressing and celery sticks on the side.

Notes

Pat cauliflower completely dry before battering to avoid sogginess. Use a wire rack on the baking sheet for even crisping. Do not overcrowd the pan; use two sheets if needed. Keep sauce warm for best coating. Serve immediately for maximum crunch. For extra crispy version, add ¼ cup cornstarch to flour mixture. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days; reheat in oven at 400°F for 5-7 minutes.
