  • ⅓ cup grated parmesan cheese (30g)
  • 2 tablespoons panko breadcrumbs (15g)
  • 1 tablespoon fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or a silicone mat.
  2. Prepare the carrots: Wash them thoroughly, cut off the green tops leaving about half an inch, and slice thick carrots in half lengthwise (leave thin ones whole). Try to keep them similar in size.
  3. Parboil the carrots: Bring a medium pot of salted water to a boil. Add the carrots and cook for exactly 3 minutes. Drain immediately and let cool on a clean kitchen towel. Pat dry gently.
  4. Make the coating mixture: In a small bowl, combine the minced garlic, grated parmesan, and panko breadcrumbs. Stir together.
  5. Season the carrots: In a large mixing bowl, toss the parboiled carrots with olive oil, salt, and pepper. Then sprinkle the parmesan mixture over the top and toss gently again.
  6. Arrange on the baking sheet: Spread the carrots in a single layer, leaving space between each one. Sprinkle any leftover parmesan mixture from the bowl over the top.
  7. Roast for 20-25 minutes, until tender and golden brown. Check at 20 minutes and add 3-5 more minutes if needed.
  8. Optional: For extra crispiness, switch the oven to broil for the last 1-2 minutes, watching closely.
  9. Garnish with fresh parsley if using. Serve hot.
