These crispy garlic Parmesan zucchini fritters are crunchy on the outside, tender on the inside, and packed with flavor. They stay crispy for hours and are the perfect way to use up summer zucchini.

  • 2 medium zucchini (about 1 pound total)
  • 1 teaspoon salt
  • 1 large egg, lightly beaten
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1/3 cup all-purpose flour
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional)
  • 2 tablespoons fresh parsley or chives, chopped
  • 3 tablespoons olive oil (or avocado oil)
  • For serving (optional): 1/2 cup sour cream or plain Greek yogurt, 1 tablespoon lemon juice, extra fresh herbs for garnish

Instructions

  1. Grate the zucchini on the large holes of a box grater. You should have about 4 cups.
  2. Place the grated zucchini in a large bowl and sprinkle with 1 teaspoon salt. Toss to combine and let sit for 10 minutes.
  3. Transfer the salted zucchini to a clean kitchen towel or cheesecloth. Gather the corners and twist tightly over the sink, squeezing out as much liquid as possible.
  4. In the same bowl (wiped out), combine the squeezed zucchini, beaten egg, grated Parmesan, minced garlic, flour, black pepper, garlic powder, and fresh herbs. Mix until just combined.
  5. Heat a large non-stick skillet or cast iron pan over medium heat. Add enough oil to coat the bottom (about 2-3 tablespoons). Let the oil heat for 2-3 minutes.
  6. Using a 1/4-cup measure or large spoon, scoop the batter and gently shape into a patty about 1/2-inch thick. Place gently in the hot oil. Work in batches of 3-4 fritters.
  7. Cook for 3-4 minutes on the first side, until deep golden brown and crispy. Flip carefully and cook for another 2-3 minutes until golden brown.
  8. Transfer cooked fritters to a wire rack set over a baking sheet or a plate lined with paper towels. Sprinkle with a tiny pinch of salt while hot.
  9. Repeat with remaining batter, adding more oil as needed. Keep cooked fritters warm in a 200°F oven if serving all at once.
  10. Optional: Mix sour cream or Greek yogurt with lemon juice and a pinch of salt for dipping sauce. Stir in extra herbs if desired.

Notes

Don’t oversqueeze the zucchini; leave a little moisture for a tender interior. Use room temperature eggs. Let the batter rest for 5 minutes before cooking. Medium heat is key for the oil. Don’t crowd the pan. Keep fritters warm in a 200°F oven on a wire rack to stay crispy. Freshly grated Parmesan is essential for best texture and flavor.
