Easy 2-Ingredient Pumpkin Dump Cake: Best Spice Cake Mix Recipe

pumpkin dump cake - featured image

This incredibly easy pumpkin dump cake uses just two ingredients—canned pumpkin puree and a box of spice cake mix—to create a dessert with a crispy, crumbly topping and a rich, fudgy pumpkin custard layer. It’s perfect for fall gatherings and is naturally dairy-free and egg-free.

Ingredients

Scale
  • 1 can (15 oz) pure pumpkin puree
  • 1 box (15.25 oz) spice cake mix
  • 1/2 cup chopped pecans or walnuts (optional)
  • 1/4 cup caramel sauce or maple syrup for drizzling (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center of the oven.
  2. Lightly grease a 9×13-inch baking dish with non-stick cooking spray or a thin layer of butter.
  3. Empty the entire 15-ounce can of pumpkin puree into the prepared baking dish. Use a rubber spatula to spread it into an even layer.
  4. Open the box of spice cake mix and sprinkle the dry powder evenly over the pumpkin puree. Do not stir. Use your fingers or a fork to break up any large clumps.
  5. If using, sprinkle chopped pecans or walnuts evenly over the top of the cake mix.
  6. Bake for 35-40 minutes, until the top is golden brown and the edges are bubbling. The top should feel firm and crisp to the touch.
  7. Remove from the oven and place on a cooling rack. Cool for at least 15-20 minutes before serving.
  8. Serve warm or at room temperature. Use a sharp knife to cut clean squares.

Notes

Do not stir the cake mix into the pumpkin; the layering is key to the texture. Let the cake cool for at least 15-20 minutes before cutting to allow it to set. For a richer crust, drizzle 2 tablespoons of melted butter or coconut oil over the top before baking. If the top browns too quickly, tent with foil for the last 10 minutes.
