This easy 3-ingredient pumpkin spice syrup is the perfect homemade coffee creamer for fall. Made with real pumpkin, brown sugar, and pumpkin pie spice, it’s ready in 10 minutes and tastes better than store-bought.

  • 1 cup (240ml) water
  • 1/2 cup (120g) pumpkin puree
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract (optional but recommended)
  • Pinch of salt (optional)

Instructions

  1. Combine sugar and water: In a small saucepan, add the brown sugar and water. Place over medium heat and whisk gently until the sugar dissolves completely, about 2-3 minutes.
  2. Add the pumpkin puree: Once the sugar is dissolved, add the pumpkin puree. Whisk vigorously to break up any clumps until smooth.
  3. Stir in the spices: Add the pumpkin pie spice and a pinch of salt if using. Whisk until fully incorporated.
  4. Simmer gently: Bring the mixture to a gentle simmer (small bubbles around the edges). Let it simmer for 5-7 minutes, whisking occasionally, until slightly thickened.
  5. Remove from heat and add vanilla: Take the pan off the heat and stir in the vanilla extract if using. Let cool in the pan for about 5 minutes.
  6. Strain the syrup (optional but recommended): Place a fine-mesh strainer over a clean glass jar or bowl. Pour the syrup through the strainer, pressing with a spatula to extract the liquid. Discard the solids.
  7. Cool completely: Let the syrup cool to room temperature, about 30-40 minutes, before putting the lid on.
  8. Store and enjoy: Once completely cool, screw the lid on tight and store in the refrigerator for up to 2 weeks. Shake or stir before each use.

Notes

Do not boil the syrup vigorously; a gentle simmer is best. Whisk constantly at the beginning to prevent clumps. Straining is worth the extra step for a silky smooth texture. The flavors get better after a day or two in the fridge. If the syrup crystallizes or gets too thick, microwave for 15-20 seconds and stir well.
