Instructions

  1. Warm the tortillas: Place tortillas on a microwave-safe plate and microwave for 10-15 seconds until warm and pliable. Alternatively, warm in a dry skillet over medium heat for about 15 seconds per side.
  2. Spread the peanut butter: Lay one warm tortilla flat on a cutting board. Spread 2 tablespoons of peanut butter evenly across the entire surface, going all the way to the edges. If peanut butter is too thick, microwave for 10 seconds to loosen.
  3. Drizzle the honey: Drizzle half a tablespoon of honey over the peanut butter, distributing evenly.
  4. Sprinkle the cinnamon: Sprinkle about 1/4 teaspoon of cinnamon over the honey and peanut butter.
  5. Place the banana: Peel one banana and place it at the edge of the tortilla closest to you, parallel to that edge. Trim ends if necessary so it fits within the tortilla.
  6. Roll it up tight: Starting from the edge with the banana, roll the tortilla away from you, keeping the banana snug. Roll firmly but not so tight that banana squishes out. Press down gently to seal the seam.
  7. Wrap and chill (optional but recommended): Wrap the rolled tortilla tightly in parchment paper or plastic wrap, twisting the ends like a candy wrapper. Refrigerate for 10-15 minutes to firm up.
  8. Slice into sushi rolls: Using a sharp serrated knife, slice the rolled tortilla into 1-inch pieces using a gentle sawing motion. You should get about 6-8 pieces per tortilla.
