  • 1 packet (1 ounce) ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled (about 68 strips)
  • 23 large flour tortillas (burrito-sized, about 10 inches)
  • 2 green onions, thinly sliced (optional)

Instructions

  1. Soften the cream cheese: Take cream cheese out of fridge 30 minutes before starting, or microwave for 10-15 seconds until soft but not melted.
  2. Make the filling: In a medium mixing bowl, combine softened cream cheese and ranch seasoning mix. Beat with a hand mixer on medium speed until smooth and well combined, about 1-2 minutes. Scrape down sides.
  3. Add the mix-ins: Fold in shredded cheddar cheese, crumbled bacon, and sliced green onions (if using). Stir until evenly distributed. Taste and adjust seasoning if needed.
  4. Prepare the tortillas: Lay one tortilla flat on a cutting board. Spread about 1/3 of the cream cheese mixture evenly across the entire surface, going all the way to the edges. Aim for a thin, even layer about 1/4 inch thick.
  5. Roll it up: Starting at one edge, tightly roll the tortilla into a log. Roll as snugly as possible without tearing. Repeat with remaining tortillas and filling.
  6. Wrap and chill: Wrap each rolled tortilla tightly in plastic wrap. Place on a baking sheet or large plate and refrigerate for at least 1 hour (or freeze for 15-20 minutes in a pinch).
  7. Slice and serve: After chilling, unwrap and place on a cutting board. Using a sharp serrated knife, slice each log into 1-inch thick pieces. Wipe knife clean between cuts. Arrange on a platter and serve immediately.

Don’t skip the chilling step—it ensures clean slices. Use full-fat cream cheese for best texture. Cook bacon until extra crispy and let cool completely before crumbling. For a spicy version, add 1-2 tablespoons chopped pickled jalapeños or a dash of cayenne. Can be assembled up to 24 hours in advance.
