  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 cup packed brown sugar
  • 1/4 cup unsalted butter, cold and cubed
  • 1/2 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving overhang on the long sides.
  2. In a large bowl, whisk together 2 cups flour, 1/2 cup sugar, and 1/4 teaspoon salt. Cut in 3/4 cup cold butter until mixture resembles coarse meal with pea-sized butter pieces. Press evenly into prepared pan. Bake for 15 minutes until edges are lightly golden. Set aside to cool slightly.
  3. In a medium saucepan, combine 4 cups sliced peaches, 1/4 cup bourbon, 1/4 cup sugar, 1 tablespoon lemon juice, and 1 teaspoon vanilla. Cook over medium heat, stirring occasionally, until peaches soften and release juices, about 5-7 minutes.
  4. In a small bowl, whisk 2 tablespoons cornstarch with 2 tablespoons cold water to make a slurry. Pour into peach mixture and stir. Cook for 2-3 minutes until thickened. Remove from heat and let cool for 5 minutes.
  5. In a small bowl, combine 1/2 cup flour, 1/4 cup brown sugar, 1/2 teaspoon cinnamon, and a pinch of salt. Cut in 1/4 cup cold butter until crumbly.
  6. Spread cooled peach filling evenly over par-baked crust. Sprinkle streusel topping over filling.
  7. Bake at 350°F for 30-35 minutes until streusel is golden brown and filling is bubbly. If browning too quickly, tent with foil for last 10 minutes.
  8. Cool completely in pan on a wire rack (about 2 hours). Use parchment overhang to lift out, then cut into squares.

Notes

Keep butter cold for flaky crust. Let filling cool before assembling to avoid soggy crust. Use ripe but firm peaches. For clean slices, cool completely before cutting. Bars taste even better the next day.
