  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • 12 tablespoons milk or heavy cream (optional, for thinner consistency)

Instructions

  1. Prep the cream cheese: Cut the cream cheese blocks into smaller cubes (about 1-inch pieces). If forgotten to soften, microwave for 15-20 seconds on low power.
  2. Layer in the slow cooker: Place the cubed cream cheese at the bottom. Add the shredded chicken on top. Pour the buffalo wing sauce and ranch dressing over everything. Sprinkle garlic powder and onion powder on top. Do not stir yet.
  3. Cook on low: Cover and cook on LOW for 2 hours. After about 1.5 hours, give it a gentle stir.
  4. Add the cheeses: After 2 hours, sprinkle the shredded cheddar and mozzarella over the top. Stir everything together until the cheeses are fully melted and the dip is smooth and creamy. If too thick, stir in a tablespoon of milk or cream at a time until desired consistency.
  5. Season and adjust: Taste and add salt and pepper if needed. For more heat, add another tablespoon of buffalo sauce. For milder, add a splash more ranch.
  6. Keep warm: Switch the slow cooker to the WARM setting. Stir occasionally. The flavors meld better over time.
  7. Garnish and serve: Right before serving, sprinkle with sliced green onions and crumbled blue cheese if using. Drizzle extra hot sauce on top if desired.

Notes

For best results, use full-fat cream cheese and grate your own cheddar and mozzarella. Cook on LOW to avoid curdling. If dip seems oily, stir in 1 teaspoon cornstarch mixed with 1 tablespoon cold water.
